3 LOW CALORIE SOUP(S)

Sweet & Sour Beef-Cabbage Soups
 Ingredients:                                                                              

TACOS (Low in calories, but big in taste)

SHRIMP TACO (takes 18 min to prepare and only 308 calories pre serving)
Ingredients:
1 1/2 tsp. olive oil
2 cloves garlic, crushed
3/4 tsp. ground cumin, divided use
1/2 tsp. ground chili powder
1 lb. raw medium shrimp, cleaned, deveined
1/4 cup nonfat plain Greek yogurt
1 tsp. finely chopped lime peel
2 Tbsp. fresh lime juice
2 Tbsp. chopped cilantro
8 corn tortillas (or 6-inch whole wheat tortillas), warm
1 cup shredded red and green cabbage
1 medium tomato, chopped
1 medium avocado, sliced
Fresh lime wedges (for garnish; optional)

Ingredients:

Cinnamon Chocolate Meringues

Cinnamon Chocolate Meringuse / Makes about 80 cookies
Ingredients:
3 large egg whites, at room temperature
1/4 teaspoon cream of tartar
3/4 cup sugar
1/2 teaspoon vanilla extract
3 tablespoons unsweetend cocoa powder,
plus 1 tablespoon for garnish (optional)
1 tablespoon ground cinnamon
1/2 cup mini chocolate chips
Preparation:
1. Separate one egg at a time into a small bowl, letting the white fall into the bowl and discarding the yolk.  transfer to a clean medium mixing bowl. Repeat with the remaining 2 eggs.

Pumpkin Cheesecake

Ingredients:         PUMPKIN CHEESECAKE
CRUST:
1 1/2 cups gingersnap cookie crumbs
1/2 cup finely chopped pecans
6 tablespoons unsalted butter, melted
1/4 cup sugar(for diabetic use splenda)
 
FILLING:
3 8-oz. packages cream cheese, at room temperature
1/2 cup packed light brown sugar
1/4 cup sugar(for diabetic use slpenda)
2 large eggs plus 2 large egg yokes, at room temperture
1 cup canned pumpkin puree
1/2 cup sour cream, at room temperature
2 teaspoons all-purpose flour

Carrot-Ginger-Lemon Cream Soup

Carrot-Ginger-Lemon Cream Soup
Ingredients:
1 1/2 lbs/700g carrots, peeled and chopped
2 medium onions, peeled and roughly chopped
1 clove of gralic, peeled and crushed
3 tablespoon of extra virgin olive oil
1 teaspoon medium curry powder
3 pints 11.6 liters of chicken or vegetable stock
Sea salt and black pepper
Rind of 1 lemon, finely shredded
Lemon Cream
7 oz/200g cream fraiche
Grated rind of 1 lemon
2 teaspoons of fresh parsley, chopped
2 teaspoons of chives, chopped
 
Directions:
heat the olive oil in a saucepan and add the onions and carrets, cook for several minutes, stirring from time to time.

Ingredients:
1cup water
1/2 lb boneless skinless chicken breast
4 cups torn romaine lettuce
1 medium papaya(about 11/2 cups)
halvedseeded, peeled & cubed
2 scallions, sliced (about 1/4 cup)
2 tbsp red wine vinegar
1 tbsp fresh lime juice
1 tsp honey
1 garlice clove, minced (about 1/2 tsp)
1/2 tsp Dijon mustard
1/2 tbsp olive oil
Salt & freshly ground black pepper to taste
1/4 cup pecan halves, toasted
 
Directions:

Slow Cooked Beef - Barley - Vegetable Soup

Ingredients:   11 - 1 cup servings
 
1 1/4 pound of lean stew beef, cut into bite size pieces
1 large onion, cut into thin wedges - 2 large cloves of garlic
1 cup of sliced carrots - 1 cup of frozen peas
1 tablespoon of beef bouillion granules
1 1/4 teaspoon of diced thyme &1 1/4 teaspoon diced oregano
1/4 teaspoon ground black pepper (salt if needed 1/2 teaspoon)
6 cups of water
1 larger tomato, cut into diced pieces
 1 small can of tomatoe paste. (use 8 0z)
1/2 cup of uncooked pearl barley

Sunny Lemon-Raspberry
1 egg
1 1/2 cups all purpose flour
1 1/2 cups WHOLE GRAIN TOTAL
ceral slightly crushed (1 cup)
1/3 cup sugar
1/4 cup canola or soybean oil
1/4 cup fat-free (skim) milk
1 teaspoon grated lemon peel
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 container (6oz) Yoplait (99 %fat free)
lemon burst yogurt (2/3 cup)
1/2 cup fresh raspberries or Cascadian Farm
frozen organic raspberries
 
Heat oven to 400*F.  Line 10 regular size muffin cups with paper baking cups

Herb Roasted Turkey with Natural Gravy

1 14-pound turkey, with giblets                  2 tablespoons dry red wine or dry sherry
2 tablespoons chopped fresh parsley         1/4 cup white wine, for basting
